Jimmy Foxx's AGP 6,000 PA career covers the years 1930-1939 and he appeared as a catcher only 27 times in those years.

Joe Torre's AGP career covers the years 1963-1972, a 10-year span which includes only three seasons ('69, '71 and '72) in which he was not primarily a catcher. In his AGP years he appeared in 723 games at catcher, 421 games at first base, 351 games at third base and 2 games in left field (that would have been interesting to see). Though his first year as a non-catcher was famously his best (he hit a league-leading .363 in 1971) his offensive output overall in his non-catching years did not match his production when he was primarily a catcher.

Brian Downing's AGP career begins in 1982 while his last appearance behind the plate was in 1981, so the idea of having a second Downing-as-a-catcher entry makes some sense. He only had 3,080 PAs through 1981, though, so you would have to slot him in your list of catchers between Buck Martinez (3,072) and John Stearns (3,082).

B.J. Surhoff is very similar to Downing: his AGP career begins in 1993 and he appeared in only 33 games as a catcher (18 starts) in his AGP seasons. He was primarily a catcher every season through 1992, though, and had 3,089 PAs which would put him between John Stearns and Joe Azcue (3,095 in your list).
